Yellow Mild Cheddar Block
  • Cheddar cheese comes in mild, sharp, and extra sharp varieties. Mild cheddars are aged from 3 to 6 months, while sharp cheddars are aged 9 to 12 months. Extra sharp cheddars are generally aged up to two years, though some cheddars are aged as long as 10 years or more.
White Mild Cheddar Block
  • The cheddaring process for artisan cheeses, which involves stacking blocks of curd by hand to help drain whey, is carried out in automated machines for block cheeses with capacities of up to 15 tonnes per hour. The 18kg cheeses, which are formed into straight-edged blocks to make cutting easier, are matured in sealed plastic bags to stop a rind from forming and to prevent weight loss.

  • Monterey Jack, sometimes shortened to Jack, is a US white, semi-hard cheese made using cow's milk, with a mild flavor and slight sweetness. It has been called "an American original" and "as a vestige of Spanish rule in the early nineteenth century, derives from a Franciscan monastic style of farmer's cheese.
